Purple pointed cabbage salad

with smoked salmon, rocket, tomato, and avocado Salad, serves four


1 purple pointed cabbage
30 grams rocket
6 cherry tomatoes
1 avocado
100 g smoked salmon
100 ml lemon juice
100 ml olive oil
2 tbsp parsley (chopped)
Salt and pepper

Preparation method

1. Halve the pointed cabbage and remove the hard core. Chop the cabbage into fine strips. Cook the strips in boiling water for four minutes until al dente or steam the cabbage in a steamer for four minutes. Then rinse with cold water and drain well.
2. Chop the tomatoes in half and chop the avocado into cubes. Add the cabbage, lemon juice, olive oil, and parsley and mix together. Season to taste with salt and pepper.
3. Divide the salad between the plates and serve with thinly sliced smoked salmon and rocket.

Tip: serve with crème fraîche.
